Dining with Mario
MARIO: Today we're
in Orange County at one of my favorite places Pascal and this is Pascal,
bonjour.
PASCAL: Bonjour, Mario.
MARIO: You know I can find my olives, I can find my wonderful salads,
I can even find my pizzas. How did this place come about?
PASCAL: I opened this place 5 years after I opened the restaurant. Customers
always asked me, where can I find the French cheese, where can I find
the French olive oil, French table cloths. So I opened this little place
to help them find this product. And this place became so busy, even busier
than the restaurant most of the time.
MARIO: Well, let's go find out where it all began.
PASCAL: Let's go in the kitchen.
MARIO: So, Pascal this is where it all began. What are we going to be
doing today?
PASCAL: Actually today we are going to do something with a little California
twist, it's not totally French but it's my French version of a rare ahi
tuna.
PASCAL: I'm going to garnish with a little mashed potato, a French vinaigrette
and some Mediterranean spices will make a light crust. We're going to
sear the tuna in olive oil. Just a little crust around and then we are
going to serve on a bed of mashed potatoes, wilted spinach, a vinaigrette
and a little crispy fried shallots on the top.
